A list of useful non-coffee specific classes

What are some good classes for a Roaster to take that are not necessarily coffee related?

The first things that come to mind are:

Mechanics and combustion systems

Foreign Languages

some International Finance

Non-coffee Sensory science

some Agronomy - but this is probably more useful the more coffee-centric it is.

other thoughts or classes? Would anyone know where you could find these classes, or rather, would anyone care to list existing classes at places that cover some of these topics? I know that there are books, but classroom and workshops settings can be invaluable.

Just to add to your list and give some details on classes I have taken or looked into taking to round myself off, they aren't necessarily for roasters but overall in the coffee industry:

Logistics / Supply Chain Management (certification courses for APICS and ISM are available)
Good Manufacturing Practices
Lean Manufacturing
Sensory Science (UC Davis offers a 4 section 1 year-long certificate program in Sensory Science...I'm 1/2 way there!)
Shelf-Life (Creascience offers courses on shelf-life, excellerated shelf-life & Statistics)

Don't forget about straightforward supply and demand global market economics. I know the SCAA is adding in higher-level classes on coffee market knowledge (‘cause I'm working on that class), but it's helpful to get a broader understanding of trading and the world markets in general. In fact, I could use some referrals on good classes (local SF Bay Area or online) or books. Anyone?
