What classes should we do for 2012 SCAA?

I am working on a the list of classes to offer for SCAA 2012 in Portland Oregon. We were thinking about what we should offer and wanted to get some suggestions from people int he Roaster's Guild community. If you are someone who is working on Roasters Guild certification what would you like to see offered this coming year? There are many classes offered that are available and we should have a new Sample Roasting class to offer as well.

Here are some up for offer..
1) RP208 Roaster Plant safety or RP104 Decaffeination (both apprentice level certification) Choose one.

2) CB205 Purchase, Finance and Green Coffee Contracts Or a more advanced version of this class (NEW)

Make the SCAA and RG training program what you need it to be by letting us know how we can make it work for you.

I'd go with decafination, and the green finance and contracts classes. I need 'em both lest I end up testing out at some point..

Through this thread and other informal channels, by popular demand, RP104 Decaffeination it is! We will also include both classes having to do with Contracts & Finance- CB205 Purchase, Finance, and Green Coffee Contracts; and CB305 (tentatively titled subject to Pro Dev Committee approval) Market Strategies, Futures, and Options. Hope to see you all in one or another of these new courses. As Schooley notes, we are also launching RP223 Sample Roasting. All of this and more in Portland, 2012.
