Classes for the North East Regional Retreat

Terry Davis - Roasting, Cupping and Comparing Profiles
All participants will receive samples of the same green coffee to roast at their facilities on their roasting equipment. Participants will roast and log the profiles of their samples utilizing the RoastTrue profiling graph supplied with the coffee or downloaded from the website http://www.ambexroasters.com. Each sample will be brought to the NERRG meeting along with the RoastTrue Profile Log. Samples will then be cupped and ranked by all interested attendees at the NERRG July 2010 meeting. Winners will explain how they decided on the roast to be used and the profile to be followed and what they were seeking to achieve with coffee.

Cupping and Understanding Microlots
For Roasters Only!
In specialty coffee we speak of the ‘Quality Pyramid’; as the quality goes up, production is less making up the top tier of the pyramid. These are the Microlots of coffee: coffees with unique character and a higher quality than the rest of the surrounding crop.
In this cupping class will we discuss the farming, processing, selection and marketing of small select lots of the most special of specialty coffees. We will discuss terminology and taste the distinct differences in a unique cupping of 6 coffees from the same region but different plots of land and different hands.

Roasting profile challenge. Has been eliminated and being replaced with
