Costa Rica - My flavor profile seems to have changed

Good morning coffee world.
It seems that lately when I'm roasting my Costa Rica Tarrazu we're finding a twangy bite at the beginning. Anyone else experiencing this and have suggestions on how to fix?
(When I first started roasting the Tarrazu this wasn't happening.) Any suggestions?

Are you using a different delivery of Costa Rica than before? Is it possible that you are comparing profiles of coffee from different harvests? Check the ICO marks on the bags to see if they are the same.

I am using a different coast rica it is still a Tarrazu, but the profile has seemed to changed with in this same bag that I have been roasting from?
