Coffee cools down too fast

Hi guys,

We were performing a cupping session today and one of our tasters observed something interesting about the change of the temperature of the samples after brewing. Few of them started to cool down faster than the others. We were trying 4 samples from different roast levels. The coffee brewed from the beans of ligther roast level cooled down faster than the others. I don't know the reasons and would like to listen your opinions about it.

The most likely cause is that the cupping bowls are different. I generally recommend that places buy a full set of cupping bowls all at once to minimize the chance of hitting variations that can occur across different manufacturing runs. If you build up the set by buying a few at a time, you're more likely to run into exactly the issue you're describing. Next time it happens, mark the cups that are cooling faster and see if that's consistent, then avoid mixing those with the cups that hold the heat better.
